Annavaram Veg Kitchen is a venture created out of our passion for Food. The idea is to introduce the delicious cuisine of Coastal Andhra to the world. The list of dishes is endless. What started with less than 10 dishes is not a long list. With a strong customer base that’s only increasing with every single day. We Well, if you have checked our menu on Swiggy or Zomato, we have a special category for Brinjal, called “For the love of brinjal”. That’s how closely aligned this one vegetable is, with the cuisine from Andhra. Any special meal should and will always have a dish with brinjal. Otherwise its almost considered incomplete. And its quite easily our best seller by miles. We cook a few 100 Brinjals every day.

Interestingly, Brinjal or Eggplant was introduced to Africa before the Middle Ages, and to Italy in the 14th century from India. The Spanish Moors introduced it to southern and Eastern Europe, where it became popular. Early explorers brought it to the Americas in the 1500s, but it didn’t catch on.

The brinjal was given the title of King of Vegetables because of its astonishingly awesome purple covering, and also the juicy and rich nutritional values in them. It’s a totally Indian Vegetable.

If you wondering why we created a separate category for Brinjal, its simply because there are so many delicious variants of Brinjal integral to the Andhra Cuisine. Each one is special in its own way and has a distinct flavor that’s unmissable. Here is a small list of specialties that we have started with.

Rest assured this list will only get longer as we fine tune and introduce more brinjal delicacies from Coastal Andhra. Brinjals are known as Vankaya in Telugu. Gutti Vankaya Kura is s very authentic dish from Andhra cuisine.

From the days when Cinema was first introduced to the world, just like all the Protagonists in Bollywood love Gajar Halwa, every single protagonist in the Andhra film industry loves Gutti Vankaya. That’s how popular this one dish is.

Traditionally Guti vankaya kura is a stuffed eggplant dish from the Andhra cuisine. The stuffing is made from a mix of desiccated coconut, peanuts and spices, which is ground finely. Small tender brinjals are stuffed with this ground masala and then cooked. A bit of tamarind pulp is added to the gravy for a faint sour taste.

At Annavaram Veg Kitchen, we use Cashew Paste in place of peanuts to give it that extra richness and the royal treatment deserved by the King of Vegetables. Try it once and you will fall in love with it forever.

One super popular variant of Gutti Vankaya is Gutti Vankaya Ulli Karam. Its popular because of the traditional love for spicy food in Andhra. This variant of Gutti Vankaya is made with a stuffing of Onion, Chilly & Ginger Paste. This is then cooked to perfection on a slow flame. The rich onion gravy seeps into the brinjal and gives it a unique taste with a burst of flavors. With all the spices its a favorite with most people in Andhra. At Annavaram veg Kitchen this is amongst our best sellers every single day. If you are in Bellandur or within 5 to 7 Kms radius of Bellandur, you can order through Swiggy or Zomato. This particular dish has become so popular from our Menu that we started a separate combo meal portion just for this. Totally based on feedback from our customers. There are many who just order a portion of Gutti Vankaya Ulli Karam and a portion of rice. And that’s it. That’s the meal. We observed this pattern and created a combo meal pairing these two items and its been one of our rock star dishes ever since.

We also have a milder and mellower version of Gutti Vankaya in the form of Sivangi Pulusu. Its not as spicy as the regular Gutti Vankaya. And it has a completely different concoction of spices. Its easy on the pallete, has a hint of sweetness to it because of the use of Jaggery & tamarind in it. (Not much but just a hint of sweetness). This is made with or without onion. Essentially two different variants for the same dish. Someday we will share the story behind this dish and how we introduced it in our kitchen.

Literally every bulk order we have taken up for any event or celebration, has this dish as a part of the menu. Without fail. Its almost as if the meal is incomplete if there is no Gutti Vankaya in it. Nothing is more satisfying than the joy of seeing so many people love this dish from our kitchen. Like they say, there are some things money can’t buy. This joy is one of them.

These three variants together comprise of 20% of our sales everyday. Both by revenue and quantity. There isn’t a day when this dish has not been in our TOP 5 dishes of the day.

In Andhra Pradesh, there is a significant “craze” for brinjal (eggplant), meaning it’s a widely consumed and beloved vegetable, often featured in many traditional dishes, making it a staple food in the region; this popularity is due to its versatility in cooking, affordability, and the availability of diverse brinjal varieties grown locally.

One such specialty from Andhra is Shivangi Pulusu. There are many variants to this delicious dish from Andhra. It’s a dish with brinjal cooked in a rich gravy and a strong hint of tamarind.

In Andhra, Brinjal (Baingan or eggplant) is a vegetable used in many dishes such as sliced Bajji, stuffed curry, Bartha, Chutney, and pickles. We started our journey with our first cloud kitchen in Bellandur on 23rd August 2024. We currently serve the area of Bellandur and upto 7 kms around this area. We would also like to assure you that we do not use any artificial colors or taste enhancers in our food. No additives in the rice. No colors in our food. The only color you will see is from our use of turmeric. The focus is to make sure that the food is as close to home cooked food as possible.
